Summer Salsa Recipe

This is very unlike me…I haven’t posted in a few weeks and now I’m going to post a recipe, which I’ve also never done.

But there were so many requests for this one and I don’t want to send all of you individual messages (sorry).

So here it is:

Summer Salsa

1/4 cup sugar

1/2 tsp garlic powder

1/4 tsp cayenne pepper

1/3 cup olive oil

1/2-3/4 cup vinegar

1 can whole kernal corn – drained

2 cans black beans – rinsed and drained

1 6 oz can jalepeno peppers chopped (I buy Mezzetta Express Deli-Sliced Tamed Jalepeno Peppers in a jar at Sobey’s and use about 1/4 of the jar for each recipe)

1 cup chopped celery

1/2 cup green pepper chopped

1/2 cup red pepper chopped

1/2-3/4 cup chopped purple onion

Mix all together and let stand overnight in the fridge.  Keeps for over a week in the fridge.  Serve with Scoops tortilla chips!
